Thread started at http://lists.linuxfromscratch.org/pipermail/lfs-support/2014-May/046904.html for 7.5. After some changes, the OP reached a situation where a (dead) acute accent on a vowel such as á appear as a single quote (i.e. the accent) followed by the letter.
This has now been confirmed on current svn, http://lists.linuxfromscratch.org/pipermail/lfs-support/2014-May/046922.html
Details of workaround (replace /etc/sysconfig/console by a script to run loadkeys es, loadkeys euro2, setfont) in that second post.

Added a note to specify the KEYMAP variable with the parent directory for es and pt keyboards.
Fixed at revision 10569.
