I accidentally managed to download 6.0.1.1 and gave it a DESTDIR build adding back --with-system-poppler. Then I realised the error when I came to try building it with the things I normally omit (java, ant, openldap). But with those --with-system-poppler still does not work.
Unless anybody objects, I plan to use 6.1.0.1 (if it works after a real install, and assuming I've not made another balls-up in my testing). Changing the title to make it more obvious.

There are not really 4 levels, see https://wiki.documentfoundation.org/ReleasePlan. The lowest level is just the last rc level, which is finally released. Thus, if you have 6.0.1.1, it means it is the first release candidate for the 6.0.1 version. Normally, according to the release plan above, 6.0.1 should be released during the week beginning in February and ending in March, but the plan has not been respected, and the release occurred earlier: https://blog.documentfoundation.org/blog/2018/02/09/early-availability-libreoffice-5-4-5-libreoffice-6-0-1/

I really did mean 6.1.0. Worked for me, but changing title back to 6.0.0.3.

I'm pretty sure the latest "stable" release is whatever's at https://www.libreoffice.org/download/download/

I'm sorry it looks like I am unable to express what I mean in English. As Armin just said, 6.0.1(.1) is the last released version. The previous released version was 6.0.0(.3), but had several issues, so that 6.0.1(.1) was released ahead of schedule (yesterday instead of at the end of February). BTW, 6.1.0.x should be released in July 2018 or so.

Thanks to both of you. It's really a "too many numbers" problem for me.
I assume we are treating x.y.z.1 releases as beta ? (6.0.1.1 was released on the 8th).
