The preparation for xdgmime needs to be changed:

git clone https://gitlab.freedesktop.org/xdg/xdgmime.git --depth=1 subprojects/xdgmime

Without it meson will download it automatically.

It may be easier to simply meson setup with -D build-tests=false, and tell the users to run meson configure -D build-tests=true && ninja test which will download xdgmime from Internet if they want to test the package.
